Kacha Golla (Half-Set Bengali Milk Balls) 🥛

Rasagolla's reckless younger cousin: chhena dough with a grainy, barely-bound heart, poached only long enough to hold shape so the centre stays half-raw, curdy and damp. Kolkata confectioners sell them in shallow syrup, and the whole point is the underdone middle that melts the second it hits your tongue.

Método

  1. 1

Curdle boiling milk with lemon, drain on muslin, rinse cold until sourness is gone, and press firm — same chhena start as rasagolla.

  2. 2

Knead only briefly, 2-3 min: unlike rasagolla you WANT a grainy texture here. Work in flour/semolina, just enough to keep the balls from dissolving.

  3. 3

Divide and roll loose, rough-surfaced balls — handled gently, not polished tight — and flatten each slightly.

  4. 4

Make a light syrup (sugar fully dissolved, barely coating) with cardamom; bring to a steady simmer and slide the balls in with space between them.

  5. 5

Poach just 5-6 min, cover, then turn off and leave them in the syrup 20 min. They set on residual heat, staying pale and soft-centred; overcooked kacha golla is just a sad rasagolla.

  6. 6

Serve warm or room-temperature in a shallow dish of the cardamom syrup, saffron threads over if using. Eat the same day — kacha golla does not negotiate with tomorrow.
