Pulla (Finnish Cardamom Knot Bread) 🥨

The smell of Finnish Sunday mornings: an enriched milk dough spiked with crushed cardamom, braided into fat knots, glazed with egg and snowed with pearl sugar. Best torn apart hot with butter and coffee.

Método

  1. 1

Warm the milk to finger temperature; dissolve yeast, add sugar and crushed cardamom.

  2. 2

Mix in most of the flour, salt and soft butter; knead 8-10 minutes to a smooth, slightly tacky dough — add flour gradually until it leaves the bowl sides.

  3. 3

Cover and prove in a warm spot until doubled, 40-60 minutes.

  4. 4

Punch down, divide into 3-4 pieces; roll each into three ropes and braid into knots, or twist single ropes into horseshoes on lined trays.

  5. 5

Proof again 20-30 minutes. Heat oven to 200°C.

  6. 6

Brush with egg-milk glaze and scatter pearl sugar generously. Bake 8-12 minutes (knots) or 15-18 (large braids) until deep gold.

  7. 7

While hot, brush the surfaces with butter. Cool on a rack; tear and eat warm.
