Ropa Vieja (Cuban Shredded Beef in Tomato Sauce) 🥩
Havana's most beloved home-cooked main course, whose name — "old clothes" — comes from the way the beef frays into ragged, savoury strands. A flank or skirt steak is simmered until fork-tender, shredded by hand, then braised low and slow with onions, peppers, garlic, cumin and tomato until everything melts into a saucy, slightly sweet, deeply savoury mixture. The long-cooked beef broth becomes the sauce, so nothing is wasted. Serve it over white rice with black beans and fried sweet plantain (the classic moros y cristianos plate) and you have the taste of a Cuban Sunday kitchen. Easy to make, impossible to rush.
Método
-
1
Cover the beef with water in a large pot, add a pinch of salt and the bay leaf, and simmer gently 1.5-2 hours until fork-tender. Reserve the broth.
-
2
Let the beef cool enough to handle, then shred it into ragged strands with two forks; trim and discard fat.
-
3
Strain the broth and measure out 1 cup.
-
4
Heat olive oil in a wide pan; soften the onion and peppers over medium heat, 8-10 minutes.
-
5
Add the garlic, cumin and oregano; stir 1 minute until fragrant.
-
6
Stir in the tomato paste and crushed tomatoes (and wine if using); simmer 5 minutes.
-
7
Add the shredded beef and the cup of broth; bring to a simmer, cover and cook 30-40 minutes on low, stirring now and then, until saucy and the flavours have married.
-
8
Adjust salt, pepper and a pinch of sugar; the sauce should cling to the meat.
-
9
Serve heaped over white rice with black beans and sweet fried plantain.
