Zemiakové Placky 🥔

Slovak 'zemiacáky': raw-potato pancakes griddled thin until the edges curl crisp, then slathered with sour cream and bacon crumbs — winter breakfast, lunch and bar snack in one.

Método

  1. 1

Grate the peeled potatoes ultra-fine — old grater, wrist and patience; squeeze out the starchy water.

  2. 2

Mix potato and onion purée with egg, flour, salt and pepper into a pourable batter.

  3. 3

Heat a heavy skillet with a thin layer of lard; spoon batter and spread it paper-thin in the pan.

  4. 4

Fry each placka 2–3 minutes per side until the underside laces brown and the edges lift free.

  5. 5

Stack the hot pancakes on a plate; they steam into tenderness while you finish the batch.

  6. 6

Crisp the bacon bits in the same pan, crown each placka with sour cream, then rain bacon over it.
