Asunción Chipa 🧀

A bread that isn't bread: cassava starch, strong cheese and egg whipped into golden rings that Pariguayos eat at every bus stop, all day.

Asunción District Paraguayan ⏱ 50 min Fácil

Método

  1. 1

Grate the cheese fine; warm milk with butter just until melted.

  2. 2

Whisk eggs with the warm milk, add grated cheese and a pinch of crushed anise.

  3. 3

Pour into cassava starch and stir to a tacky dough — it should cling to fingers, not knead smooth like wheat dough.

  4. 4

Roll cigar shapes and join ends into rings (or press a well with your thumb), spacing on a tray.

  5. 5

Bake at 200°C for 15-20 minutes until blistered and gold-flecked; eat the same day, warm or at room temperature with coffee.
