Tulumba Tatlısı (Lemon-Fried Semolina Doughnuts) 🍋

The sweet grenade of the Balkans' çarşı: a stiff semolina-flour dough is piped into ridged fingers, fried twice until the shell shatters, then drowned in ice-cold lemon syrup. Crunch first, then a sour-sweet flood.

Zubereitung

  1. 1

Make syrup first: boil sugar with 250 ml water, lemon peel and juice for 8-10 minutes to a light thread; chill completely in the fridge.

  2. 2

Bring 125 ml water, butter and salt to a boil; add flour and semolina at once and stir hard over low heat until the dough pulls from the pan, 3-4 minutes. Cool 15 minutes.

  3. 3

Beat in eggs one at a time, then the cornstarch, until the dough is glossy and holds a stiff pipe.

  4. 4

Load a large star nozzle; pipe 5 cm fingers directly into cold oil (this stops them sticking), or onto floured foil.

  5. 5

Bring oil to 150°C, fry the pieces 3-4 minutes until pale; lift out, raise heat to 180°C, return for 2-3 minutes until deep golden and crisp.

  6. 6

Straight from the pan, drop the hot tulumba into the ice-cold syrup for 2 minutes. Serve cold, one piece per fork.
