Bubur Ayam (Jakarta Chicken Congee) 🥣

The sound of Jakarta waking up is the cry of the bubur ayam cart. Rice cooked down to a silky, almost pourable porridge is ladled into a bowl and dressed like a small landscape: shredded chicken, salted peanuts, fried shallots, celery, lime and a dark thread of sweet soy sauce, with a spoonful of kuah kaldu — yellow turmeric chicken broth — poured around the edge. Crowds pick it apart with cakwe (fried dough stick) and satay-liver sauce. Cheap, warm, texturally absurd in the best way.

Zubereitung

  1. 1

Simmer the rice with half the stock, lemongrass and lime leaves in a heavy pot, stirring often, 45-60 minutes until the grains collapse into a smooth, thick porridge. Add more hot stock as it tightens; season with salt.

  2. 2

For the broth, simmer the chicken thighs with turmeric, a smashed garlic clove and salt until cooked; reserve the golden liquid and shred the meat.

  3. 3

Blend the porridge with a whisk for a silkier finish if you like it Jakarta-smooth.

  4. 4

Ladle porridge into bowls, off the heat, and pour a little turmeric broth around the edge until it pools.

  5. 5

Top with shredded chicken, fried shallots, crushed peanuts, celery, spring onion and sliced cakwe.

  6. 6

Finish with a thread of kecap manis, a squeeze of lime and sambal; add satay or liver sauce if the cart would.
