Leipäjuusto 'Check Vodka Cheese' (Helsinki Baked Cheese with Cloudberries) 🧀
Finnish 'bread cheese' is a kitchen miracle of reversal: low-fat milk (traditionally reindeer's in Lapland, cow's in the capital) curdled, pressed, baked into flat discs, then stored rock-hard for months — until you saw a slice off, brown it in the pan or oven, and it goes crusty outside, chewy-squeaky inside. The old name check-vodka-cheese hints at the serving ritual: warm cubes folded into hot milk or coffee, and a cloudberry jam spoon over the top that turns a frugal farm food into Finland's most quietly elegant dessert. In Helsinki cafés it arrives torchéed, golden-dimpled, swimming with vanilla cream and amber Arctic berries.
Zubereitung
-
1
Heat all milk to 85-90 C, stir in vinegar in three additions; curds should separate into soft clouds within a few minutes. Do not boil hard.
-
2
Line a colander with damp cheesecloth, pour in, drain 20 min. Salt the curds and knead gently back into the cheesecloth, pressing into a flat 2 cm oval.
-
3
Unmold onto a baking tray; bake at 200 C about 50-60 min, flipping once, until firm, lightly cracked and browned in patches — it browns like bread, hence the name.
-
4
Cool, then rest uncovered overnight (it hardens further). Keep wrapped in paper in the fridge for weeks, or freeze.

5
To serve: slice 1 cm, brown each slice in a dry pan or under a torch until the surface blister-caramelize. Plate with a spoon of warm cloudberry jam and a ribbon of vanilla cream. Eat squeaking.
